Anyone know if there’s plans for and 817 or 917? I can’t find any mention or discussion.

I  suspect we'll see more GP models introduced in the fall if I  know Taylor.

I could be wrong but I believe we'll see a 327 and/or a 527 before seeing a 817/917...

It's all speculation a this point.  They will make a big announcement in Wood & Steel, then a few months later those new models will start appearing in stores.  Since they apparently are converting everything over to V bracing, that takes some time on the factory floor.
Taylors:  424-LTD (all koa) and a 114ce that lives with friends in Alaska.  Low maintenance carbon fiber guitars are my "thing" these days, but I will always keep the koa 424.  Several ukulele and bass guitars too.
*Gone but not forgotten:  a 2001 414ce, 410, 354-LTD twelve string, 314-N, 416-LTD baritone, T5 Classic, 615ce, 2006 GS-K, 1996 (first year) Baby

I still haven't had a chance to play pone of the new Grand Pacifics (which is a weird name, considering the other "Grands": Concert, Auditorium, Orchestra, Symphony, but whatever). One of the local dealers (well, about an hour away) has advertised a huge discount sale on Taylors. I'm wondering if that's to help get rid of old stock so they can bring in more current options...

Yep...sounds like speculation at this point. I really like both the 517 and 717, but would love to see and play one in gloss.

Right now R&D is really focused on getting the GO and GS models converted to V-class. It's anyone's guess as to what other GPs will be released, but I'd love to see an 817 and an 817 deluxe. If that happens, you guys will definitely see a NGD party from me.
