I have my Wildwood 812ce 12fret, has caused me to start reducing my collection of Taylors. I played a 562ce and that or a 552ce may be in the future someday, but set for now.
Unfortunately, it's a Martin.
That is totally cool too, nothing wrong with loving other guitars, I doubt you would find anyone here to criticize that. Hope you can attain it and enjoy it a long time.

Let me temporarily re-phrase the question to include guitars in general.

I thought I had achieved that holy grail 30 something years ago right after I bought my rosewood Gibson J200,  to go along with my Gibson Les Paul cherry sunburst with hand-wound pick-ups. Fast forward to the present, where I now own too many (no way?) acoustic guitars, including a few Taylors. Unfortunately I have also lately acquired a bit of arthritis, so my current workhorse is my new-to-me 412e-R rosewood Grand Concert with the shorter scale.

Let me answer an unasked question. If I had to have only one, it would be that Taylor 412e-R. No, there's nothing special about the looks, but I can play it pain-free all day. And I love the sound, otherwise I wouldn't have bought it. I really enjoy the different sounds my other guitars bring, especially my 818e, which is the best sounding instrument I have heard. But I have to adapt.

So back to the original question, my holy grail would be a rosewood/spruce (my overall favorite sound), and for all the reasons above, I already own it - the 412e-R.

But my ears are always open, and who knows what I'll hear tomorrow?

no issues with that statement, we support all guitars, just have a common love for taylor.

Besides aesthetic changes to the 700 series, Andy Powers introduced other changes (Can I say improvements?) to this line that I feel had long suffered from being not the 800 series. Changes included lutz spruce tops, bracing, and the use of protein glue...

I've decided after a year of contemplation to go for its little brother the 712ce 12-fret. It's going to be a stretch to my budget but the pleasure & quality will last long after the price is forgotten, right? Partly my reason to bite the bullet now is because I live in England and with the new Rosewood CITES rules & impending Brexit which probably means it can only get more expensive with added importation barriers from Taylor's European distribution HQ in Amsterdam, once the UK has crashed out of the EU single market. And my local Taylor dealer has quoted me a fair price. 🙂

Thanks. I really love it, and it surprised me when it arrived in a very good way. I'd never seen the 700 series burst in person and had never played one with the lutz spruce top. Both exceeded my expectations as did the sum of the changes that Taylor had made to the oft overlooked 700 series guitars. Hope you enjoy your 712ce 12 fret as much as I do my 714....

At this moment in time, the dream guitar would be an 814ce with custom neck with 1 11/16 inch nut.

My 810e runs quite close to the dream, but the 1 3/4 inch nut makes the neck just a shade too wide for comfort, and the dreadnought doesn't quite have the delicious tonal balance of the 814. All of these things gradually recognised in hindsight, of course.

Thanks jr! I've put down a deposit and it's on order estimated delivery early October.  I've heard so many good things about the new 700s. I can't wait for NGD to arrive! 🙂
