It depends on what you like to hear. Hardwood tops like koa or mahogany tend to sound warmer or more mellow than spruce tops, which typically have more sparkle on the high end.
My Taylor Grand Auditoriums:

1997 Cujo14 - old growth cedar/black walnut
2014 K24e - master grade koa
2018 Custom GA - bear claw sitka spruce/mahogany
2019 614 - torrified sitka spruce/flamed maple
2020 714 - lutz spruce/rosewood

Many will say the tone wood does not make much difference in a laminate guitar. There is a subtle difference because of the top wood, though. My all koa  mini is a bit more mellow than the rosewood version I had, but not as warm as the all mahogany versions I have tried out.

All should say the laminate sides and back make no difference despite which tonewood veneer is used.

What does make a difference is the solid top wood.

So a spruce/(laminate)sapele should sound the same as a spruce/(laminate)walnut, but a spruce/(laminate)walnut will sound different than a koa/(laminate)koa. But only because the difference between spruce and koa tops in the latter case.

How high is up?  Well, it is as high as my drill Sarg. said it is.
