Thats a pretty tough choice, both are great looking and sounding combinations..
Im assuming you are talking in Taylors only?
I would say it may come down to what kind of tone you are trying to get or prefer, what body shape and size, etc..

If you are thinking of building something new, you may not get to choose, Macassar was off the menu last I heard..

Personally... Redwood and Cocobolo is maybe my favorite combination of all..
Walnut and Cedar is pretty sweet too, if talking about combos!

Because I love the sparkle, tonal range and looks of Cocobolo.
But R/E is very nice also, with a nice clarity.
Its like choosing between Vanilla and Chocolate, both are quite good options to have..

Seems like--in theory--redwood and ebony might have more limited dynamic range, although the combo might be appealing for hog enthusiasts.  Theoretically redwood-coco sounds more appealing.  Haven't tried either combo for real so take conjecture for what it's worth.

I've tried 'em all.  Nothing floats my boat quite like redwood/coco -- just the perfect combo of tonal range and warmth.  On a 12-fret, it's just spectacular.
