As one who learned to read music starting with my first guitar lesson a long time ago,  I think you are exactly on the right track and I would not change a thing you are doing. Theory and reading are a terrific foundation to lay down.

I agree with those who cautioned not to over practice.  I think your practice schedule is fine and I would not increase it at all.

Lastly, know that every instrument is hard and possibly frustrating at first.  It involves just getting over a "hump" where you can get it to sound the way you want it to.  Prior to that, people get frustrated and feel they are getting nowhere, and most just give up whatever instrument it is.  I'm mostly talking about physical skills now.  Keep going, and your physical skills and sound will improve.  Be patient.

Don't change anything!
