I'm not sure how other people do it, but I hold the pick between my thumb and index finger, then use my middle finger to pluck another string.  Seems to work pretty well.

I would do it the same way as DennisG describes, picking the lowest pitched note with the pick and the higher note with my middle finger. I do use my ring or pinky* instead of the middle every once in a while, depending on which particular string(s) need to be played simultaneously.

* Realistically, I almost never use my pinky, but if it just happens to work out as the best option, I'll use it.

depending on what it is, sometimes I use a pick and either my middle or ring finger, or I'll just use the pick and mute the stings in between the ones I want to sound.

It's easy if the strings are right next to each other. If it's the 6th string and the 1st string you're trying to pick at the same time--I haven't figured that out yet.
